Chocolate Fudge Brownies

I used to despise brownies. They had nuts in them. They were dry. And they gave headaches. But then I had one that was all goo-ey in the middle, fudge like, it was warmed up and served with vanilla ice cream - the good kind where you can see the seeds.

So I went in search of a recipe where I could replicate this experience. I found one, a good one and they turned out goo like on the inside too.

See look how crispy they turned out on the outside and then how chewy they are in the middle......



You'll need........

130g plain flour
1 teaspoon baking powder
1/4 teaspoon of a Nespresso pod
450g of good quality dark chocolate (70% cocoa) 
525g granulated sugar
170g unsalted butter
1 teaspoon vanilla essence
5 large eggs



You'll need to.......

Line and grease a 9 x 13in baking tray

Preheat oven to 180 degrees Celsius

Sift together the flour, baking powder and coffee and set aside

In a heavy bottomed saucepan melt butter, sugar, chocolate and vanilla. Once completely melted whisk this for 30 seconds.

Then, while still warm, beat in one egg at a time into the chocolate mixture.

Now mix in the flour mixture and at a medium speed beat for 45 seconds.

Pour the mix into your prepared tin.

Bake for 45 minutes until the cake mix pulls away from the sides of the tray.

Let them cool for 20 minutes and then cut them up before they cool completely.

Sprinkle with a dusting of icing powder like below.......
