So I got very unpleasant food poisoning from a deli in Dublin there recently and subsequently found out that they got their chicken from China, it came vacuum-packed......
I've always loved to make things from scratch, just the general fascination of it, but after that fateful Saturday that went up a notch and I said right I'm knowing where my food came from and what's in it (as much as possible) from here on in.
The first thing I was able to make myself and eat a few days later was this chicken and veg wrap with whipped feta. I got fresh peppers, basil, red onions, tomatoes, baby leaf lettuce and chopped them all up and left them raw. Then I got a whole roasted chicken from my local Dunnes, it was free range (I always try and get free range chicken and eggs), some wholewheat wraps, a block of feta and a tub of plain organic Glenisk yogurt. It took zero time. It was really fresh and tasted nice and clean and was full of nutrients.
The only real making in it was the whipped feta. This whipped feta is like a cream cheese the Americans are mad after. You can use cream but I went for yogurt. I used a block of feta (200g) and about 200ml of the yogurt. I then laced it with two heaped teaspoons of dried oregano and some salt and pepper. It was fun to whip up and lasted a good five days in the fridge. I used a hand held blender.
After assembly, which was a messy affair, they looked like this......
So here are the steps........ first I'll give you the ingredients officially....
8 cherry tomatoes
1/2 yellow pepper
1/2 red pepper
1/2 bag baby leaf lettuce
1/2 red onion
A handful of chopped basil
Roasted chicken (bits of the breast pulled off)
2 wholewheat wraps
200g feta
200ml plain yogurt
2 teaspoons of dried oregano
So wash and chop the veg......
Whip the feta and yogurt.....
Pull apart the chicken for nice juicy strips......
Assemble and roll the wrap.......
